Hmmm, I think you just confirmed for me that the counter top model might work... With a proper disconnect, one could unplug after pulling the vacuum. I was concerned that the counter top model would pull too hard or fast for safety, but if the handheld is slow, the counter top model is likely about right.
I'm definitely interested in the design you've come up with for the cups and connection - might be able to quickly adapt it for the counter top model.
FYI: you can pickup used foodsavers at many thrift stores, just make sure it's a model with the vacuum port.
